  1. hi chef..I'm new to your videos..They are really informative. I just have certain doubts about the chocolate you are using..is it tempered or just the compound melted right away ?? Becuase when ever I try to make garnishes it always melts as soon as it comes out of the refrigerator. Please suggest me a method to rectify this
